Bake to Basics Class: Easy as Pie 11/22

Welcome to Bake to Basics! A baking series dedicated to giving you the knowledge and inspiration to be a better baker – no matter what your current skill level. These classes are for beginners and experts alike. Everyone learns something in our Bake to Basics classes! You can take just this class or the entire series (see list below).
In our Easy as Pie Class, we’ll talk about why pie dough seems to frustrate so many of us. You’ll learn all the necessary techniques and lessons with apple pie as our teacher. After this class you’ll have the confidence to move forward into mastery of this classic all-American dessert. The extra fun part is that once you’ve explored this technique, you’ll be on the road to unlocking the skills to make all kinds of baked goods both sweet and savory: tarts, pies & pot pies, rugelach, galettes, and even puff pastry!

About the instructor: Chef Julian is the Executive Chef and Owner of Canandaigua’s Pintxo Wine Bar, a small-plates restaurant featuring Spanish wines and traditions. His culinary career began in New York City as a stagaire at Le Bernardin. This auspicious start was followed by positions in kitchens around the city, including Lever House Restaurant, Lure Fishbar, and the Crosby Street Hotel, where he was the property’s opening Pastry Chef. Julian launched Melt Bakery in 2010 with just a few hundred dollars. New York City’s first ice cream sandwich store, Melt went on to operate dozens of seasonal locations, over 80 wholesale accounts, hundreds of special events, and two permanent storefronts. Julian and his team served millions of ice cream sandwiches to NYC locals and visitors over Melt’s 12-year run, funding the entire enterprise exclusively with sales. Julian also developed ice cream flavors and formulas for Denver-based Marco Ice Cream, where he was the cofounder and Chief Culinary Officer.
His lifelong love for the Finger Lakes brought Julian back home in 2022, where he and his team launched Pintxo in downtown Canandaigua in May 2024.
